This is an easy, eggless chocolate cake recipe with the added goodness of ragi and a nice crunch from walnuts. Quick to prepare, ideal as a tea cake.
Ingredients
-
1/2 cup ragi flour.
-
1/2 cup all-purpose flour (maida).
-
1/4 cup unsweetened cocoa powder.
-
1/2 tsp baking powder.
-
1/4 tsp baking soda.
-
pinch salt.
-
1/2 cup brown sugar.
-
1/2 cup fresh curd.
-
1/4 cup rice-bran oil.
-
1/2 tsp vanilla essence.
-
2 tbsp chopped walnuts.
Steps
-
Sift together all the dry ingredients – maida, ragi flour, cocoa powder, baking powder, baking soda and salt. Sieve it for at least 3 times.
-
In another bowl, mix together brown sugar, oil, curd and vanilla essence till well combined.
-
Grease a loaf pan with little oil and dust it with maida.
-
Preheat oven to 170C.
-
Add the chopped walnuts to the dry ingredients mixture. Combine the dry ingredients into the bowl of wet ingredients and mix together gently.
-
Add a few tbsp of milk if the batter is too thick.
-
Pour the cake batter into the loaf pan. Gently tap it for 3 times so any trapped air gets released.
-
Bake in the preheated oven for 25 minutes.
-
Check if the cake is well baked using a knife/fork. Unmould the cake after 15 minutes. Slice and serve warm.
